Ingredients
- 1/4 c creamy, no sugar added peanut butter
- 2 tbsp splenda
- 1-1/2 tbsp hot water
- 1 tbsp lime juice
- 1 tbsp light soy sauce
- 1-1/2 tsp dark sesame oil
- 1/4 tsp red pepper flakes
- 2 tbsp vegetable oil
- 3 c fresh broccoli florets
- 1/2 c chopped red pepper
- 1/4 c sliced green onion
- 1 clove garlic, crushed
Directions
- Combine peanut butter, splenda, hot water, lime juice, soy sauce, sesame oil, & pepper flakes until well blended; set aside.
- Heat veg oil in large skillet over medium-high heat. Add broccoli, red pepper, onion & garlic. Stir-fry 3-4 mins or until veggies are tender-crisp. Remove from heat & stir in peanut butter mixture.
- Serve warm over rice or asian noodles of your choice.
