Ingredients
  • 1/4 c cream, no sugar added peanut butter
  • 2 tbsp splenda
  • 1-1/2 tbsp hot water
  • 1 tbsp lime juice
  • 1 tbsp light soy sauce
  • 1-1/2 tsp dark sesame oil
  • 1/4 tsp red pepper flakes
  • 2 tbsp vegetable oil
  • 3 c fresh broccoli florets
  • 1/2 c chopped red pepper
  • 1/4 c sliced green onion
  • 1 clove garlic, crushed

Directions
  1. Combine peanut butter, splenda, hot water, lime juice, soy sauce, sesame oil, & pepper flakes until well blended; set aside.
  2. Heat veg oil in large skillet over medium-high heat. Add broccoli, red pepper, onion & garlic. Stir-fry 3-4 mins or until veggies are tender-crisp. Remove from heat & stir in peanut butter mixture.
  3. Serve warm over rice or asian noodles of your choice.
