How to make it

  • Line 12 muffin cups with bake cups. In food processor,finely grind nuts with 2Tbs sugar and 1/8tsp salt. Add 1 Tbs. orange juice;process until combined.Using a level Tbs. shape some nut mixture into 12 balls;st aside remaining.
  • Combine flour,baking powder,soda,and salt;set aside. Beat butter with mixer 30 seconds;beat in 3/4c sugar. Beat in eggs,orange juice,milk and oil on low until combined. Spoon half of batter into cups;top with walnut balls then remaining batter. Bake at 350 for 20 mins. or until tops spring back when touched. Cool in pans for 5 mins.. Cool on rack. Spread frosting;top with reserved nuts
  • Frosting: Beat 1/2 cups softened butter,1/4c whipping cream, and 1/2 tsp finely shreaded orange peel until combined. Beat in 11/2c powdered sugar. Spread on muffins

    Isn't this a great recipe? I made it as soon as I saw it in the April BHG magazine. They do have some great recipes!
