How to make it

  • IN an oven-proof casserole, saute onions in butter over moderately low heat, stirring until softened.
  • ADD wild rice and cook 5 minutes, stirring to coat rice.
  • Add seasonings to taste and blend. Stir in chicken stock. Bake, covered, at 350 degrees for 1 hour, or until rice is tender. Prior to serving, add pine nuts and fluff into the rice mixture.

    Yummy! Made this with the Easy Easy Chicken Francesca -> http://www.grouprecipes.com/16001/easy-easy-chicken-francesca.html . Used some of the mushroom soup in place of 1/2 cup of the chicken stock. Served the chicken on top with fresh mozzarella and it came out beautifully yummy! Will definitely be making again.
