Mustang Rice Recipe
I love rice! But it gets boring and this is my absolutely favorite to pair with many different kinds of meat!

Ingredients
  • 1 Cup green onions, chopped with tops
  • 2 tblsp butter
  • 1 cup wild rice, rinsed well and drained
  • 1 tblsp minced fresh sage, or 1 1/2 teaspoons crumbled dried
  • 1 tsp fresh thyme leaves, or 1 teaspoon crumbled dried
  • 2 cups chicken stock
  • 1/2 cup toasted pinons (pine nuts)

Directions
  1. IN an oven-proof casserole, saute onions in butter over moderately low heat, stirring until softened.
  2. ADD wild rice and cook 5 minutes, stirring to coat rice.
  3. Add seasonings to taste and blend. Stir in chicken stock. Bake, covered, at 350 degrees for 1 hour, or until rice is tender. Prior to serving, add pine nuts and fluff into the rice mixture.

Yummy! Made this with the Easy Easy Chicken Francesca -> http://www.grouprecipes.com/16001/easy-easy-chicken-francesca.html . Used some of the mushroom soup in place of 1/2 cup of the chicken stock. Served the chicken on top with fresh mozzarella and it came out beautifully yummy! Will definitely be making again.
