Ingredients
  • Chicken: 3 boned chicken breasts, skinned
  • or 4-6 chicken breasts
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp oregano
  • Spinach: 2 ten ounce pkgs of frozen spinach - well drained or 3-4 sixteen ounce bagged spinach
  • Creamed Sauce:
  • 6 Tbsp butter
  • 1 cube chicken boullion cubes or granules
  • 1/4 cup and 2 Tbsp flour
  • 1 & 1/2 cups milk
  • 1/4 tsp salt and 1/8 tsp pepper

Directions
  1. Mix flour and seasonings.
  2. Coat chicken and brown both sides in pan
  3. Sauce:
  4. Melt butter over low heat, dissovle chicken bouillon cube in butter
  5. Remove from heat, blend in flour till smooth
  6. Gradually add milk stirring constantly
  7. Add salt and pepper
  8. Cook over low-med heat, stirring constantly until sauce thickens and boils
  9. Reduce heat and cook 2 more minutes
  10. Stir spinach into sauce, pour into casserole dish, place chicken breasts on top of spinach and top with generous amount of shredded mozzerella
  11. Bake at 325 degrees for 50-60 minutes
