Junes Chicken Florentine

- Chicken: 3 boned chicken breasts, skinned shopping list
- or 4-6 chicken breasts shopping list
- 1/2 cup flour shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/4 tsp oregano shopping list
- Spinach: 2 ten ounce pkgs of frozen spinach - well drained or 3-4 sixteen ounce bagged spinach shopping list
- Creamed Sauce: shopping list
- 6 Tbsp butter shopping list
- 1 cube chicken boullion cubes or granules shopping list
- 1/4 cup and 2 Tbsp flour shopping list
- 1 & 1/2 cups milk shopping list
- 1/4 tsp salt and 1/8 tsp pepper shopping list
How to make it
- Mix flour and seasonings.
- Coat chicken and brown both sides in pan
- Sauce:
- Melt butter over low heat, dissovle chicken bouillon cube in butter
- Remove from heat, blend in flour till smooth
- Gradually add milk stirring constantly
- Add salt and pepper
- Cook over low-med heat, stirring constantly until sauce thickens and boils
- Reduce heat and cook 2 more minutes
- Stir spinach into sauce, pour into casserole dish, place chicken breasts on top of spinach and top with generous amount of shredded mozzerella
- Bake at 325 degrees for 50-60 minutes
