How to make it

  • Whisk together the cornstarch and water, set aside.
  • Blend the chopped macadamias, sugars and vanilla in a food processor until well combined. Add cornstarch mixture and gind to a coarse paste.
  • Remove half of the mixture and press into a lightly greased 8" square tin.
  • Add coffee and cocoa to remaining mixture, and process until smooth.
  • Pat on top of bottom layer, pressing down gently with hands.
  • Cover with plastic and refrigerate at least 1 hour before cutting.
