Spaghetti Gifts Recipe
AKA pasta al cartoccio, this is a deliciously steamed, low-fat pasta and seafood meal that is a hit when you serve them at parties or with a romantic dinner.

Ingredients
  • 2 tbsp water
  • 1 large Onion, chopped
  • 4 cloves garlic, chopped
  • 16 fresh clams
  • 16 fresh mussels
  • 16 large shrimp, cleaned, tail on
  • 10 cherry tomatoes, halved
  • 1 cup vegetable broth
  • 2 tbsp fresh basil
  • 1/4 cup plain tomato sauce
  • 1 lb whole wheat spaghetti

Directions
  1. Cook pasta 4 1/2 minutes (the pasta should be cooked only halfway) in a large pot of salted water. Drain and set aside.
  2. Preheat oven to 350 F.
  3. Add water to a large pot over medium-high heat
  4. Add the onion, garlic, seafood and cherry tomatoes and saute about 1-2 minutes.
  5. Add the broth. Simmer 4-5 minutes, stirring occasionally.
  6. Stir in tomato sauce and basil.
  7. Add cooked pasta to sauce, tossing to coat.
  8. Equally divide the pasta among 4 parchment paper squares.
  9. Fold the squares to make a triangle and dampen the edges to seal.
  10. Wrap the triangles in foil. Bake 5 minutes and serve.
