Ingredients
  • 1 tortilla, regular, multi-grain or low-carb
  • 3 T tomato sauce- homemade or bought
  • 1/2 c shredded mozzarella cheese
  • 1/2 oz crumbled feta cheese
  • 4 slices good prosciutto
  • 1/4 c (or so) roasted acorn squash, sliced
  • 1/4 c (or so) carmelized cippolini onions, sliced thick
  • a few dashes of cayenne pepper
  • a few dashes of amchur/amchoor powder

Directions
  1. Spread sauce evenly over tortilla, right to the edge
  2. Sprinkle with all but 2T mozzarella, right to the edge
  3. Tear prosciutto slices in half and arrange over pizza
  4. Sprinkle squash with the cayenne pepper, and arrange on pizza
  5. Add onions & feta cheese
  6. Top with remaining mozzarella
  7. Sprinkle entire pizza with a little amchoor
  8. Transfer pizza to a heated pizza stone in a 400F oven (or so- my oven is old)
  9. Remove when cheese is bubbly and golden
  10. Eat!
  11. **The sweet/salty/nutty flavours have a party together, and are bumped up by the cayenne & amchoor. Feel free to try other ways or adding spice and acid- I'd love to hear what works!

Any pizza with feta cheese is good by me! But the green mango powder (amchoor) is gonna take a little getting used to. Still I like adventure, I'll give it a go!

What a great recipe! We have been using tortillas for pizza for about 15 years while my wife was trying to figure out if she was alergic to yeast breads, and we kept wtih the practace.
