How to make it

  • Pre-heat oven on HIGH.
  • Chop peppers into 1 inch chunks.
  • Chop onions into 1 and a 1/2 inch chunks.
  • Mix the oil, Cumin powder and sugar with the vegetables.
  • Roast in the oven for 1/2 hour - 45 mins unitl the peppers have charred slightly at the edges.
  • For the Cous-cous:
  • Put Cous-cous in a large bowl.
  • Add the Cinnamon, salt and pepper and Garam Masala (if using) and mix well.
  • Pour over enough boiling water to cover (usually the same volume, not weight, as the Cous-cous).
  • Leave for 5-7 minutes until the Cous-cous is soft
  • Stir in the Peppers and serve.

    Hi :)
    I just whack the oven up to top temperature - I want the peppers to roast and I think a lower heat may make them stew a bit. They are still nice and soft when they come out!
