Baked Pineapple Recipe

Ingredients

2 cans pineapple chunks

1 1/2 C. sugar

1 1/2 C. shredded cheddar cheese

2 Tbs. flour

1 1/2 sticks margarine,melted

1 1/2 stacks crushed Ritz crackers

Directions

Preheat oven to 325°F.

Pour drained pineapple chunks in baking dish.

Mix sugar,flour and cheese by hand then pour over pineapple.

Mix melted margarine and crackers and pour over pineapple mixture.

Bake 25 to 30 minutes.

Serve warm.

This is incredibly delicious! My aunt owned an inn and we served this as a passing dish in the dining room for years. I lost the recipe and finally found a good version. My husband gagged and whined the entire time I was mixing it up for him, then I forced him to try it. Now we have it once a week and have been for over a year. Try it with sharp cheddar!
