For those who are allergic to the glory that is the tomato, here is a substitute. It isn't spot-on so don't expect it to be, but it is red and full of vegetables... moreso than the storebought kind. About 10 servings of 2 tbsp each.

Ingredients
  • 1 cup diced, overcooked carrots
  • 1/3 cup diced, overcooked beets
  • 1/4 cup water
  • 1/4 cup lemon juice
  • 1 tablespoon brown sugar (or to taste, you may need more or less depending on the beets and carrots)
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • pinch basil
  • pinch oregano

Directions
  1. Puree until very smooth, adding a little water if necessary.
