Italian Doughnuts

- 1 (15 oz) container ricotta cheese shopping list
- 4 eggs shopping list
- 1 tbsp vanilla shopping list
- 1-1/2 c all purpose flour shopping list
- 1/2 c splenda shopping list
- 2 tbsp baking powder shopping list
- 1/2 tsp salt shopping list
- oil for frying shopping list
- Sifted powder sugar or cinnamon/sugar shopping list
How to make it
- In a large bowl, beat ricotta cheese with an electric mixer on medium speed until smooth
- Add eggs and vanilla, beat until combined
- Let batter sit for 30 mins
- Drop batter by well-rounded tspful, four or five at a time into deep hot fat
- Cook 2-1/2 to 3 mins or until golden brown, turning once
- Remove doughnuts with slotted spoon and drain on paper towels
- Repeat with remaining batter
- Cool completely
- Shake doughnuts in a bag with powedered sugar or cinnamon/sugar or combo
- Makes about 3 dozen
