Chicken Legs With Garden Veggies Recipe
LOVE this one dish meal when the veggies are fresh from the garden in the summertime. This is my favorite combo, but, can add mushrooms, zucchini, etc. Easy, tasty, versatile one dish meal!

Ingredients
  • 3 lbs chicken thighs and / or / drumsticks
  • Salt & freshly ground pepper
  • 3 TB vegetable oil
  • 2 medium Yellow Squash, sliced
  • 1 lg. Onion, sliced
  • 1 red pepper, rough chopped or julienned
  • 1 Lg tomato, chopped
  • 1/2 tsp dried basil
  • 1/4 tsp dried marjoram
  • 1/4 tsp paprika
  • 1/8 to 1/4 tsp cayenne pepper to taste
  • 1/2 C dry white wine
  • Chicken broth or water, if needed

Directions
  1. Season chicken with salt & pepper.
  2. In a large frying pan, or electric skillet heat oil over medium heat. Add chicken & cook turning, until browned, about 10 minutes.
  3. Add squash, onion, red pepper, tomato, basil, marjoram, paprika & cayenne ; mix well.
  4. Pour wine over all.
  5. Stir well, scraping bottom of pan
  6. Cover, reduce heat, & simmer 30 minutes, adding chicken broth or if liquid evaporates.
