How to make it

  • Puree all ingredients except bean liquid in a food processor. Gradually add the minimum amount of chickpea liquid required to give the mixture a thick, creamy, smooth consistency. Blend until all graininess is gone. Cover and refrigerate at least 1 hour.
  • Note: Using 4 chiles makes this hummus mildly spicy.

    Just whipped this up. I made a milder version using only 2 chipotle chilies in adobo sauce. I use that ingredient pretty often so I know the heat tolerance for me and my family. With two I get a nice warm burn but it allows me to enjoy the other flavors. I made it a tiny bit more lemony by also adding in the zest of the lemon as well as the juice. I like to accentuate the taste of sesame so I included 1 tbsp of sesame oil. Last little thing was a teaspoon of Splenda just to soften the edge.

    With those changes this probably doesn't qualify for posting in I Made It, but I thank you for posting this really great, simple recipe.

    Good recipe, thank you for posting. I made chipotle in adobo for the first time this year and used a chunk of it that I had frozen. Spicy but not too spicy.

    I just noticed that I neglected to mention that I usually scrape out the seeds, and just use the flesh... did you use the seeds? When I used four chiles, it was mildly spicy - definitely too spicy for kids, but should not be so spicy that it masks the flavor... I'll fix the recipe right now to note not to use the seeds.

    Whoa nelly! I was so excited to make this. Then when I did I thought my taste buds were going to blow up! It was good... but SO much spicier than I had anticipated! Maybe I'm a total weiner but this was HOT! And there's more of it than I could possibly eat alone (it's too hot for my son who usually shares my hummus love). Maybe only 2 chipotles next time! ;-)
