Chipotle Hummus

- 2 cans (15.5-oz) garbanzo beans ; (chickpeas) drained, with liquid reserved shopping list
- 2 teaspoons cumin powder shopping list
- 3/4 teaspoon Freshly ground pepper shopping list
- 3/4 teaspoon salt shopping list
- 1/3 cup Fresh lemon juice shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 teaspoon fresh garlic ; chopped shopping list
- 1/3 cup tahini ; (sesame seed paste) shopping list
- 4 whole chipotle chiles in adobo sauce ; (use more or less to taste) shopping list
- 2 teaspoons adobo sauce from canned chipotle chiles, seeds removed ; (use more or less to taste) shopping list
How to make it
- Puree all ingredients except bean liquid in a food processor. Gradually add the minimum amount of chickpea liquid required to give the mixture a thick, creamy, smooth consistency. Blend until all graininess is gone. Cover and refrigerate at least 1 hour.
- Note: Using 4 chiles makes this hummus mildly spicy.

Good recipe, thank you for posting. I made chipotle in adobo for the first time this year and used a chunk of it that I had frozen. Spicy but not too spicy.
