Crab And Shrimp Newburg Recipe

Ingredients
  • 2 tablespoons flour
  • 4 egg yolks
  • 2 drops Tabasco sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups milk
  • 3 tablespoons butter, melted
  • 1/4 cup sherry
  • 3/4 pound crabmeat
  • 1 1/2 pounds shrimp cooked and peeled

Directions
  1. Blend flour and egg yolks.
  2. Add seasonings to milk and add to egg mixture; add melted butter.
  3. Blend until smooth.
  4. Stir while cooking over low heat until thickened.
  5. Add sherry and seafood, pour into casserole and brown quickly under broiler.

This is a killer recipe and you could also use a combo of crawfish tails and shrimp for a variation. I would like to suggest that instead of Tabasco, switch to Louisiana Hot Sauce. Crystal is a good brand, also. It's a lot less agressive against other flavors. Yummy.
