Citrus Red Miso Ginger Glazed Halibut Recipe

This sauce is simple to make that your guests will not know how little time you spend on making this Japanese inspired dish. Red miso is richer, sweeter and denser than regular white miso and can be found in most asian grocers.

Ingredients
  • 4 halibut filets approx. 2 inches in thickness or any firm white fish
  • flour for coating
  • salt and pepper to taste
  • 1 tsp of olive oil
  • 1 clove of garlic, minced
  • 1 tbsp of fresh ginger, grated
  • 1/3 c orange juice
  • 1 tbsp sugar
  • 2 stalks of green onion, chopped
  • 1/4 c of red miso (Akamiso)

Directions
  1. Lightly salt and pepper halibuts.
  2. Coat lightly with flour.
  3. Heat oil in pan and add halibut filets. Cook over medium at 2 minutes per side. Turn only once.
  4. Shake pan slghtly to avoid sticking.
  5. Remove and place in foil pan skin side up. Finish cooking in a 350 degrees oven for another 5 to 7 minutes. Check occasionally.
  6. Add ginger and garlic to pan. Slowly add orange juice and scrap some of the drippings from the pan.
  7. Add red miso and wisk lightly. Add sugar to disolve and salt and pepper to taste.
  8. Once sauce thickens, add the green onion.
  9. Serve on top of fish with rice and salad.

I must make this - never used red miso before, I've always like the mild tasting lighter miso. Sounds like dinner tonight, to me lol. Great post, thanks for the inspiration :)
