How to make it

  • Season mahi mahi with salt and pepper and coat one side with coriander.
  • Saute until coriander is lightly toasted then place in the oven.
  • Sauté shrimp then add in the rice along with the chicken stock.
  • Cook slowly stirring constantly.
  • When rice is cooked stir in butter, parmesan, salt and pepper.
  • Serve mahi over mahi over rice.
