Coriander Crusted Mahi Mahi Recipe

Ingredients
  • 6 ounce mahi mahi filet
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon coriander
  • 6 tiny bay shrimp
  • 3 ounces plain risotto
  • 12 ounces chicken stock
  • 1 tablespoon butter
  • 1 tablespoon parmesan cheese
  • 1 teaspoon chives
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions
  1. Season mahi mahi with salt and pepper and coat one side with coriander.
  2. Saute until coriander is lightly toasted then place in the oven.
  3. Sauté shrimp then add in the rice along with the chicken stock.
  4. Cook slowly stirring constantly.
  5. When rice is cooked stir in butter, parmesan, salt and pepper.
  6. Serve mahi over mahi over rice.
