Coriander Crusted Mahi Mahi

- 6 ounce mahi mahi filet shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
- 1 teaspoon coriander shopping list
- 6 tiny bay shrimp shopping list
- 3 ounces plain risotto shopping list
- 12 ounces chicken stock shopping list
- 1 tablespoon butter shopping list
- 1 tablespoon parmesan cheese shopping list
- 1 teaspoon chives shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
How to make it
- Season mahi mahi with salt and pepper and coat one side with coriander.
- Saute until coriander is lightly toasted then place in the oven.
- Sauté shrimp then add in the rice along with the chicken stock.
- Cook slowly stirring constantly.
- When rice is cooked stir in butter, parmesan, salt and pepper.
- Serve mahi over mahi over rice.
