Ingredients
  • 1 pound Rigatoni
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 1 bunch of swiss chard (can sub with spinach); cleaned and minus stems
  • minced garlic (1 teaspoon)
  • 3 tablespoons of Olive oil
  • salt and pepper
  • 3 tablespoons of butter

Directions
  1. Preheat oven to broil
  2. Prepare rigatoni as package directs.
  3. Cut peppers and onions into pieces(size depends on you. I like strips).
  4. Toss with olive oil and place on foil; put in oven and let roast, about 10-15 min or until skin browns, turning in between cook time.
  5. With a skillet, add butter and saute swiss chard until tender
  6. Add minced garlic and roasted vegetables to swiss chard in skillet; continue saute.
  7. Rinse and drain rigatoni. Add to skillet, with olive oil, salt and pepper and toss, blending ingredients.
  8. Enjoy with parmesan or feta(my preference), and some warm garlic bread. Can add mushrooms, or chicken.
