How to make it

  • Preheat oven to broil
  • Prepare rigatoni as package directs.
  • Cut peppers and onions into pieces(size depends on you. I like strips).
  • Toss with olive oil and place on foil; put in oven and let roast, about 10-15 min or until skin browns, turning in between cook time.
  • With a skillet, add butter and saute swiss chard until tender
  • Add minced garlic and roasted vegetables to swiss chard in skillet; continue saute.
  • Rinse and drain rigatoni. Add to skillet, with olive oil, salt and pepper and toss, blending ingredients.
  • Enjoy with parmesan or feta(my preference), and some warm garlic bread. Can add mushrooms, or chicken.
