Rigatoni with sauteed swiss chard and grilled vegetables

- 1 pound Rigatoni shopping list
- 1 green bell pepper shopping list
- 1 red bell pepper shopping list
- 1 yellow bell pepper shopping list
- 1 onion shopping list
- 1 bunch of swiss chard (can sub with spinach); cleaned and minus stems shopping list
- minced garlic (1 teaspoon) shopping list
- 3 tablespoons of olive oil shopping list
- salt and pepper shopping list
- 3 tablespoons of butter shopping list
How to make it
- Preheat oven to broil
- Prepare rigatoni as package directs.
- Cut peppers and onions into pieces(size depends on you. I like strips).
- Toss with olive oil and place on foil; put in oven and let roast, about 10-15 min or until skin browns, turning in between cook time.
- With a skillet, add butter and saute swiss chard until tender
- Add minced garlic and roasted vegetables to swiss chard in skillet; continue saute.
- Rinse and drain rigatoni. Add to skillet, with olive oil, salt and pepper and toss, blending ingredients.
- Enjoy with parmesan or feta(my preference), and some warm garlic bread. Can add mushrooms, or chicken.
