WHIPPED PINEAPPLE YAMS

- 2 POUNDS OF yams CUT INTO 1- INCH SLICES shopping list
- 1 TEASPOON salt shopping list
- water FOR BOILING shopping list
- 1/2 CUP PACKED brown sugar shopping list
- 1 CUP buttermilk shopping list
- 1/2 CUP coconut milk shopping list
- 1 ( 20 OUNCE) CAN crushed pineapple IN syrup NOT juice shopping list
How to make it
- IN A MEDIUM SAUCEPAN, PLACE YAMS AND ENOUGH WATER TO COVER, AND SALT. BRING TO A BOIL OVER HIGH HEAT AND THEN REDUCE HEAT TO A SIMMER UNTIL YAMS ARE SOFT AND CAN BE EASILY PIERCED WITH A FORK.
- DRAIN, COOL AND PEEL YAMS
- IN A BLENDER OR FOOD PROCESSOR, PUREE TOGETHER THE YAMS, BUTTERMILK,COCONUT MILK, BROWN SUGAR, AND CRUSHED PINEAPPLE.
- PLACE IN A GLASS CASSEROLE DISH AND BAKE AT 350 DEGREES F. TO REWARM FOR 10 TO 15 MINUTES.
