How to make it

  • Steam cauliflower and broccoli until crisp/tender ( about 5 - 10 minutes).
  • Transfer vegetables to a large bowl.
  • Add lettuce and red bell pepper.
  • Toss gently.
  • Combine the chicken broth, water, lemon juice, olive oil, garlic, crushed red pepper, salt and black pepper in a small jar.
  • Cover tightly, shake and blend well.
  • Pour over vegetable mixture.
  • Toss gently.
  • 74 calories per serving.
  • Serve immediately.
