Ingredients
  • 6 Fillets of fresh or frozen whiting fish
  • 1 Lemon
  • Fresh Marjoram or Greek Oregano
  • Fresh Lemon Balm
  • 1 Lemon
  • 3-4 TBS Olive Oil
  • Red pepper flakes
  • Fresh cracked pepper
  • Sea salt
  • 2 toes of garlic

Directions
  1. Place fillets in a baking dish
  2. Drizzle olive oil over
  3. Finely chop herbs and add
  4. Zest half of lemon over fish
  5. Add sea salt, cracked pepper and red pepper flakes
  6. Put garlic through a mincer and add
  7. Cut lemon in half and use one half to squeeze on fish
  8. Quarter the other half of the lemon and serve with fish.
  9. Bake fish for 20 minutes at 350, then broil to finish 10-15 minutes.

I just remembered that I have 30+ year-old oven that is much slower cooking than newer ones. When we bought the house the oven came with it and needs replacing. Anyway, I should also note that those with a decent oven will have shorter cooking times.

Alterations


I opted to mix all the ingredients to flavor the fish separately, mixed it, applied it and left it on the whiting fillets for a few minutes to let them marinade the fillets for a bit. Worked well for me. I also used dry oregano instead of fresh. Tasted good.

With this approach, my skinny fillets and my oven, cooking time was less - took only 15 min of baking at 350ºF and less than 5 min of broiling at 500ºF. Beware!

I think this recipe would be good also with cod... I'll have to try that! Need to stay light with the sea salt, though...
