If you like (or even love) Reuben sandwiches you will enjoy this casserole. Serve it with Russian or Thousand Island dressing, just as you would the sandwich!

Ingredients
  • 1 16oz can or package of corned beef
  • 1 16oz can/jar sauerkraut
  • 3/4 cup Bisquik or biscuit mix (OR 1/2 cup Bisquik mixed with 1/4 cup rye flour and 1/4 tsp baking powder for the rye bread flavor of a Reuben sandwich)
  • 3 eggs
  • 3/4 cup milk
  • 1/2 cup mayonaisse
  • 6 slices Swiss cheese

Directions
  1. Preheat oven to 400F
  2. Spread sauerkraut in a 9x13 inch baking dish
  3. Top sauerkraut with corned beef
  4. Mix together the Bisquik (or Bisquik and rye flour+baking powder), eggs, milk and mayonaisse and pour over the corned beef and sauerkraut
  5. Top with Swiss cheese
  6. Bake for 30-35 minutes
  7. Serve with Russian or Thousand Island dressing
