Pickled Jalapeno Mayonnaise Recipe
Wicked twist on tartar sauce, wonderful accompaniment to fried fish, on a burger! Drizzled on avocado and tomato slices.

Ingredients
  • 1/2 cup of pickled jalapenos chopped
  • 1/8 cup lime juice (about one juicy lime if you can find any these days) Why are they all dried up lately, nuking doesn't help!!
  • 1/4 cup of chopped cilantro leaves no stems, fine chop
  • 1 garlic clove, minced
  • 4 fresh green onions, minced white and green part
  • 1 cup mayonnaise
  • salt and pepper
  • I like seasoned salt and red pepper but for aesthetics you might want to use white pepper and plain salt.

Directions
  1. Chop.
  2. Mix.
  3. Add enough heat to make you happy.
  4. Enjoy.

I just made this to go with tomatoes for lunch...who needs anything but a spoon?! I can't imagine a fish sandwich with plain old tartar sauce again. Still have to make those burgers...with jalepeno cheese melted over, tomatoes, bacon, maybe a little guac and jalepeno mayo! Thank you! (oh, and I already put this in my MasterCook - it only has 44 calories per tablespoon. Practically diet compared to regular mayo)
