Light Turkey And Broccoli Meatloaf Recipe
This was a surprisingly light-tasting meatloaf. The chili sauce gave it a slight tangy taste that added just the right kick. From the Premium Saltines box.

Ingredients
  • 10oz frozen chopped broccoli, thawed and drained
  • 1 C shredded sharp cheddar (or reduced fat cheddar), divided
  • 1/3 cup minced onion
  • 1/4 cup chili sauce, divided
  • 1 T chopped fresh parsley
  • 1 egg, lightly beaten
  • 1-1/2 lbs ground turkey
  • 24 saltine crackers, divided

Directions
  1. Heat oven to 350.
  2. Chop broccoli to 1/2" pieces. Reserve 2 T cheese; sprinkle remaining cheese into broccoli and set aside.
  3. Place 12 crackers into a ziplock bag, flatten air out and seal; crush with rolling pin.
  4. Combine onion, 2 Tablespoons chili sauce, parsley, and egg; add cracker crumbs and turkey, mixing lightly.
  5. On waxed paper, pat meat mixture into 12x8 rectangle.
  6. Sprinkle broccoli and cheese mixture onto meat to within 1/2" of edge.
  7. Coarsely break reamining 12 crackers; sprinkle over broccoli.
  8. Starting at short end, roll up jelly-roll fashion, using waxed paper to help; seal ends.
  9. Place loaf in 9x13 sprayed baking dish.
  10. Bake for 55-65 minutes.
  11. Take out meatloaf and place on top of stove. Top with remaining 2 Tablespoons of chili sauce and cheese. Let sit 15 minutes.

  13. 232 calories, 419 mg sodium, 99 mg cholesterol, 11 g total fat, 3 g sat fat, 1 g fiber.
