How to make it

  • Heat oven to 350.
  • Chop broccoli to 1/2" pieces. Reserve 2 T cheese; sprinkle remaining cheese into broccoli and set aside.
  • Place 12 crackers into a ziplock bag, flatten air out and seal; crush with rolling pin.
  • Combine onion, 2 Tablespoons chili sauce, parsley, and egg; add cracker crumbs and turkey, mixing lightly.
  • On waxed paper, pat meat mixture into 12x8 rectangle.
  • Sprinkle broccoli and cheese mixture onto meat to within 1/2" of edge.
  • Coarsely break reamining 12 crackers; sprinkle over broccoli.
  • Starting at short end, roll up jelly-roll fashion, using waxed paper to help; seal ends.
  • Place loaf in 9x13 sprayed baking dish.
  • Bake for 55-65 minutes.
  • Take out meatloaf and place on top of stove. Top with remaining 2 Tablespoons of chili sauce and cheese. Let sit 15 minutes.
