Light Turkey and Broccoli Meatloaf

- 10oz frozen chopped broccoli, thawed and drained shopping list
- 1 C shredded sharp cheddar (or reduced fat cheddar), divided shopping list
- 1/3 cup minced onion shopping list
- 1/4 cup chili sauce, divided shopping list
- 1 T chopped fresh parsley shopping list
- 1 egg, lightly beaten shopping list
- 1-1/2 lbs ground turkey shopping list
- 24 saltine crackers, divided shopping list
How to make it
- Heat oven to 350.
- Chop broccoli to 1/2" pieces. Reserve 2 T cheese; sprinkle remaining cheese into broccoli and set aside.
- Place 12 crackers into a ziplock bag, flatten air out and seal; crush with rolling pin.
- Combine onion, 2 Tablespoons chili sauce, parsley, and egg; add cracker crumbs and turkey, mixing lightly.
- On waxed paper, pat meat mixture into 12x8 rectangle.
- Sprinkle broccoli and cheese mixture onto meat to within 1/2" of edge.
- Coarsely break reamining 12 crackers; sprinkle over broccoli.
- Starting at short end, roll up jelly-roll fashion, using waxed paper to help; seal ends.
- Place loaf in 9x13 sprayed baking dish.
- Bake for 55-65 minutes.
- Take out meatloaf and place on top of stove. Top with remaining 2 Tablespoons of chili sauce and cheese. Let sit 15 minutes.

- 232 calories, 419 mg sodium, 99 mg cholesterol, 11 g total fat, 3 g sat fat, 1 g fiber.
