Ingredients
  • 3 cups Self Raising Flour
  • 1 cup White Sugar
  • 1 tsp Bi Carbonate of Soda
  • 1 tsp Vanilla Extract
  • 2 large Eggs
  • 2 cups cold Milk
  • 1/2 cup cold Water
  • Food Colors

Directions
  1. Place everything except food colors into a medium - large mixing bowl.
  2. Using an electric mixer, mix on low speed until all ingredients are well combined.
  3. Turn up the speed to high, and beat for a further minute.
  4. Scoop 2 ladels full of the batter into another bowl and add your desired food color (the more drops the brighter the color, I use about 10).Repeat this with 3 or 4 different colors.
  5. Drop tablespoons of batter onto a med-high skillett or flat frying pan and cook, flipping once when a few bubbles appear and begin popping on top.
  6. Serve with fresh fruit and ice-cream, or a mix choice of fruit jams.
