Chunks of ripe melon blended with lime juice and tiny bit of sugar. Prep time does not include freeze time. Fresh frozen dessert that can you make in your own freezer.

Ingredients
  • 2 Tablespoons bottled or fresh lime juice(1 lime = 2 Tablespoons)
  • 4 Tablespoons granulated white sugar
  • 1/8 teaspoon salt(optional)
  • 8 cups honeydew melon(about 2 1/2 lbs) seeds & rind removed, cut into 2 inch pieces
  • Fresh mint leaves or wafer cookies for garnish(optional)
  • 9 x 12 inch metal baking pan or 8 x 8 inch metal baking pan

Directions
  1. STEP ONE -
  2. Put the lime juice, sugar and salt into a blender & cover
  3. Turn blender on and drop melon pieces in thru the lid on blender
  4. Blend until melon is completely pureed, about 1 minute.
  5. You should have about 8 cups
  6. STEP TWO -
  7. Place a fine mesh sieve over a large bowl.
  8. Don't push the pulp through!
  9. Pour the pureed melon into a sieve, letting the juice strain into the bowl and leaving the pulp in the sieve.
  10. Gently scrape the bottom of the sieve with a rubber spatula to help the juice drain through.
  11. You should have about 4 cups of juice
  12. STEP 3-
  13. Pour the juice into a 9 x 12 in metal baking pan and place in freezer for 1 hour. The mixture will begin to freeze
  14. STEP 4-
  15. Stir or scrape the mixture with a fork, making sure not to scratch the metal pan. Continue to scrape every 20 minutes until mixture is completely frozen and has crystallized (about 1 hour )
  16. Cover with plastic wrap and garnish with mint or wafer cookies
  17. Sugar can be reduced to 2 Tablespoons depending on sweetness of melon
  18. Save time and buy packaged melon
  19. (Watermelon can also be used!)
  20. Granita can be made ahead. Once it is scraped, it will retain its light consistency. It may need a quick stir before serving
