  • 2 TABLESPOONS VEGETABLE OIL
  • 1 POUNDS PORK SAUSAGE
  • 1 FRYER CHICKEN 31/2 TO 4 POUNDS CUT UP
  • 1 TEASPOON SALT
  • 11/4 CUPS LONG GRAIN RICE
  • 11/2 CUPS DICED TOMATOES
  • 2 CUPS BEEF BROTH
  • 2 TEASPOONS TABASCO PEPPER SAUCE OR MORE (I LIKE MORE)
  • GARLIC OIL OPTIONAL TO TASTE

Directions
  1. HEAT 1 TABLESPOON OF OIL IN LARGE DUTCH OVEN OVER MED HEAT
  2. ADD SAUSAGE AND COOK STIRRING TO BREAK UP MEAT,UNTIL PINK HAS DISAPPEARED 5 TO 6 MIN
  3. TRANSFER TO PLATE
  4. SEASON CHICKEN PIECES WITH SALT ADD REMAING OIL TO POT ADD CHICKEN AND BROWN EVENLY.REMOVE PAN AND DRAIN OIL
  5. ADD SAUSAGE
  6. RICE
  7. TOMATOES
  8. BROTH
  9. AND TOBASCO
  10. IF USING GARLIC OIL ADD NOW
  11. BRING TO A BOIL AND REDUCE HEAT TO MED AND COVER
  12. SIMMER TILL RICE IS TENDER AND LIQUID IS ABSORBED ABOUT 25 MIN
  13. LET STAND 10 MINS AND SERVE
