Bear Mountain Spice Cookies

- 1/2 pound unsalted butter softened shopping list
- 4 Tablespoons molasses shopping list
- 1 cup sugar shopping list
- 1 large egg shopping list
- 1 Teaspoon vanilla shopping list
- 1 3/4 cups unbleached flour shopping list
- 1 Teaspoon baking soda shopping list
- 12 Teaspoon salt shopping list
- 1 Teaspoon ground cinnamon shopping list
- 1 1/2 Teaspoons ground ginger shopping list
- 1/2 Teaspoons ground cloves shopping list
- 1 Cup medium chopped wanuts or pecans shopping list
- 1/2 cup dried tart cherries shopping list
- 1/2 cup dried cranberries, or a cup of either shopping list
- small bowl of cool water shopping list
- small bowl sugar shopping list
How to make it
- Combine flour, baking soda, salt and spices in a bowl and set aside
- With an electric mixer cream the butter, sugar and molasses
- Add the egg and vanilla and mix well
- Add the flour mixture, mixing well
- Add nuts and berries mixing until incorporated
- At this point you may either cover the mixing bowl or wrap the dough in plastic wrap then refrigerate for at least 1/2 hour
- Remove dough from fridge and make into desired balls. I use different sizes of scoops depending on the size cookie I wish to make, 1-2 ounce.
- Dip the tops of the cookie into cool water then sugar
- Place on a lined with parchment paper or one that has been sprayed with pan coating
- Bake n a pre-heated 350 degree oven for 16 minutes
- Remove from oven and cool for 5 minutes then transfer to a wire cooling rack
- These cookies freeze well for months in a zip-loc bag
