Peppermint Brownie Sandwiches

Make this from a mix, or use your favorite brownie recipe
Ingredients
- Brownie Recipe shopping list
- 1 package (about 1 pound) brownie mix shopping list
- 2 tablespoons cocoa shopping list
- 1 teaspoon vanilla extract shopping list
- Peppermint buttercream Recipe shopping list
- 1/2 cup soft butter shopping list
- 2 cups confectioners sugar shopping list
- 1 or more tablespoons of cream shopping list
- 1/4 teaspoon peppermint extract shopping list
- Few drops of red food coloring (optional) shopping list
- Makes 3/4 cup. shopping list
How to make it
- Prepare two 8- inch-square pans as directed on package of Brownie mix
- Make the brownies according to the directions on box, but add the cocoa to the dry ingredients and stir in the vanilla with the liquid ingredients.
- Spread the batter thinly and as equaly as possible in the 2 pans.
- Bake according to the directions on the package, but remember that thin brownies will take less time to bake.
- Cool and remove from pans
- Blend the first 3 ingredients from Peppermint Buttercream recipe
- Stir over low heat until creamy
- Add peppermint.
- Spread the Peppermint Buttercream onto one brownie layer, top with other brownie layer and cut into bars.
