Easy Easy Way to Cook Chicken

- 6 or 7 *frozen* chicken breasts, skinless and boneless shopping list
- salt and pepper (I sometimes use a chicken rub) shopping list
- 1 or 2 ribs of celery with leaves, broken into large pieces shopping list
- 1/2 onion cut into chunks shopping list
- olive oil shopping list
- THIS MAKES ABOUT 4 CUPS shopping list
How to make it
- Line a jelly roll pan with foil lengthwise, and large enough to hold the chicken breasts (You will later join the ends of the foil and fold)
- Quickly rinse the frozen chicken breasts
- Sprinkle both sides with salt and pepper (unless using rub with salt)
- Place on foil
- Place onion and celery around chicken
- Drizzle with olive oil
- Join the ENDS of the foil, fold twice, and flatten on top of chicken
- Fold in SIDES of foil now to seal the +packet+
- Cook in a 350 degree oven for 55-60 minutes.
- Remove from oven, chicken will continue to cook in foil
- Let rest in foil for 30 minutes
- Unfold foil and place chicken on plate
- Make a spout at one end of the foil, and pour off the delicious broth to use later
- If not using the chicken immediately, place in a tightly sealed container and refrigerate
- You can pull chicken apart along grain in 1/2 inch strips OR
- You can use kitchen shears to cut across grain into bite size pieces
- Use in casseroles, salads or any recipe that calls for cooked chicken

This is a very wise way to cook chicken...I like it very much. No messy at all and all the juices concentrated in a delicious broth. Next time I buy chicken breasts I will try your recipe. Thanks for sharing. Best regards.
