Easy Easy Way To Cook Chicken Recipe
I find this a great way to cook chicken. I make chicken salad from the cooled chicken; I use the cooked chicken for casseroles, etc. It's just an easy, perfect way to cook chicken. Broth is delicious.

Ingredients
  • 6 or 7 *frozen* chicken breasts, skinless and boneless
  • Salt and pepper (I sometimes use a chicken rub)
  • 1 or 2 ribs of celery with leaves, broken into large pieces
  • 1/2 onion cut into chunks
  • Olive oil
  • THIS MAKES ABOUT 4 CUPS

Directions
  1. Line a jelly roll pan with foil lengthwise, and large enough to hold the chicken breasts (You will later join the ends of the foil and fold)
  2. Quickly rinse the frozen chicken breasts
  3. Sprinkle both sides with salt and pepper (unless using rub with salt)
  4. Place on foil
  5. Place onion and celery around chicken
  6. Drizzle with olive oil
  7. Join the ENDS of the foil, fold twice, and flatten on top of chicken
  8. Fold in SIDES of foil now to seal the +packet+
  9. Cook in a 350 degree oven for 55-60 minutes.
  10. Remove from oven, chicken will continue to cook in foil
  11. Let rest in foil for 30 minutes
  12. Unfold foil and place chicken on plate
  13. Make a spout at one end of the foil, and pour off the delicious broth to use later
  14. If not using the chicken immediately, place in a tightly sealed container and refrigerate
  15. You can pull chicken apart along grain in 1/2 inch strips OR
  16. You can use kitchen shears to cut across grain into bite size pieces
  17. Use in casseroles, salads or any recipe that calls for cooked chicken

Okay -- don't use free-range chicken, that was my mistake. Sorry, it sounds delish, I'll have to try it again following the recipe this time!
