How to make it

  • Line a jelly roll pan with foil lengthwise, and large enough to hold the chicken breasts (You will later join the ends of the foil and fold)
  • Quickly rinse the frozen chicken breasts
  • Sprinkle both sides with salt and pepper (unless using rub with salt)
  • Place on foil
  • Place onion and celery around chicken
  • Drizzle with olive oil
  • Join the ENDS of the foil, fold twice, and flatten on top of chicken
  • Fold in SIDES of foil now to seal the +packet+
  • Cook in a 350 degree oven for 55-60 minutes.
  • Remove from oven, chicken will continue to cook in foil
  • Let rest in foil for 30 minutes
  • Unfold foil and place chicken on plate
  • Make a spout at one end of the foil, and pour off the delicious broth to use later
  • If not using the chicken immediately, place in a tightly sealed container and refrigerate
  • You can pull chicken apart along grain in 1/2 inch strips OR
  • You can use kitchen shears to cut across grain into bite size pieces
  • Use in casseroles, salads or any recipe that calls for cooked chicken
