Caramel Pecan Fudge Pie

- Crust shopping list
- 1 ½-2 cups ground Oreo cookies (regular or chocolate filled) shopping list
- 5 Tablespoons melted unsalted butter shopping list
- ¼ Teaspoon vanilla extract shopping list
- Combine all ingredients and press into a glass pie plate (I use a deep dish) shopping list
- Filling shopping list
- 1 ½ sticks (3/4 cup) unsalted butter shopping list
- ¾ cup dark brown sugar (If you have only light brown sugar in your pantry it’s ok to use) shopping list
- 6 Tablespoons corn syrup (Light or dark) shopping list
- 3 Tablespoons heavy cream shopping list
- 3 cups pecan halves shopping list
- 2 ounces unsweetened chocolate melted or chopped fine (I use the microwave for melting) shopping list
How to make it
- Preheat oven to 350 degrees
- In a heavy saucepan combine, butter, sugar and corn syrup over low heat stirring frequently until melted. Raise the heat and boil, stirring constantly for 4 minutes
- Stir in heavy cream and pecans and return to a slow boil for 5 minutes
- Remove from heat and stir in the chocolate
- Pour into the pie pan and bake approximately 10 minutes or until the mixture bubbles
- Cool then refrigerate
- If you wish you may run a knife around the edges and remove the pie from the pan to slice. I do this to free-up my pie pans for my next project
- Serves 12-16
- Freezes well tightly covered for 2-4 months
