Paglia E Fieno Recipe
This is one of my favorite classic italian dishes, its so quick and easy. i make this at least once a month

Ingredients
  • 1 pound egg noodles
  • 4 T butter
  • 1 C light cream
  • 4 oz pancetta (chopped)
  • 1 C frozen peas ( thawed )
  • 1 1/2 C grated parm cheese
  • 1/2 t black pepper

Directions
  1. Cook noodles in salted boiling water until al dente
  2. Drain and toss with half of the butter
  3. In a small saucepan warm cream ( do not boil )
  4. In a large skillet saute remainder of the butter with the pancetta until meat is crisp
  5. Drain off the the grease, and add warmed cream, peas 1 C of the grated parm and the pepper.
  6. Stir over medium heat until sauce thickens slightly
  7. Add the noodles to the pan and toss to coat with the sauce.
  8. serve with the grated parm on top
  9. Enjoy!

Seems devilishy, can't wait to try it! I've been mastering homemade egg noodles so this would be a great recipe to couple with it!
