Ingredients
  • 6 cloves garlic, chopped finely
  • 1/2 onion, diced
  • 4-5 lbs. mussels, cleaned and de-bearded
  • 1/2 cup dry white wine
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1/2 cup butter

Directions
  1. Heat a saucepan and add butter
  2. allow butter to melt and add onions
  3. after about a minute add garlic, wine, pepper, salt, and cook for a few minutes
  4. add mussels and cover immediately
  5. when mussels open (about 2 minutes)
  6. * do not cook longer than 3 minutes. if some of the mussels didn't open, thrown them away.

I love to make this and it's so simple. I saw a recipe in Food & Wine a few years back that was a Scottish version that used hard cider and that's the way I always make it now. Delish!
