I was not in the mood to cook tonight and I needed a quick side to go with chicken nuggets. I didn't have time for fries to even cook, so I threw this together. I know - Mom of the year, LOL!

Ingredients
  • 1 Small Package Idahoan Instant Potatoes
  • Spicy Mustard (to taste)
  • 1/4 onion, sliced paper thin
  • Salt and Pepper (to taste)
  • 4 - 5 slices of whatever cheese you have in the fridge (I mixed American and Swiss)

Directions
  1. Microwave the potatoes (as directed on package)
  2. Remove onto a microwave-safe plate and spread out
  3. Sprinkle with Onion
  4. Squirt with mustard
  5. Cover with Cheese
  6. Back into the microwave for 30 seconds - 1 minute (or until the cheese is melted)
  7. Serve
