How to make it

  • Cook ham hocks with enough water to cover. I use a pressure cooker for about 1 hour. If you cook on the stovetop, cook for about 1 1/2 hours, or until the meat falls off the bone.
  • Cool ham hocks and liquid to remove fat and separate meat from fat and bones.
  • Put boneless meat back into the liquid and start to simmer.
  • Add all ingredients to pot and simmer for at least an hour. It is better to simmer as long as you would any good soup.
  • Boil noodles according to package instructions, al dente is best.
  • Heat vegetable oil in large fry pan and drop in drained noodles about 1" deep.
  • After noodles get golden, but not too brown, put in individual soup bowls and spoon in soup over them.
  • Add some nice black pepper and hot sauce if you like!

    This is different than how I make mine...I like the tomato addition. And fried egg noodles? I'm all over that!

    Oh-my-gosh. I cannot tell you how many times over the twenty-five years I've been married I made Ham hocks and Beans. It's so funny because, my husband taught me. He is originally from Missouri and I was a California girl who had never heard of Ham Hocks and Beans! I love it and cannot eat it without crumbling corn bread right in the bowl with it! Thanks for taking me down memory lane. Great post!
