Beestings Pancakes For Beltaine

Beestings, also known as Colostrum, is the first milk, rich in protein and other nutrients, that a cow produces for several days after the birth of a calf. In some Celtic regions, this milk is highly valued, and is made into cheese curds and pancakes. Ingredients
- 5 cups flour shopping list
- 1 teaspoon baking soda shopping list
- large pinch of salt, or to taste shopping list
- 1 egg yolk shopping list
- 2-3 teaspoons sugar shopping list
- 4-5 cups beestings shopping list
- butter or lard for frying shopping list
How to make it
- Mix the flour, baking soda, salt, egg yolk and sugar in a large bowl.
- Beat in enough of the beestings to create a batter of the desired thickness.
- Drop tablespoonsful of the batter on a hot greased griddle and cook for 4 to 6 minutes on each side.
- Serve with rich butter, cream or syrup.
