How to make it

  • Mix the flour, baking soda, salt, egg yolk and sugar in a large bowl.
  • Beat in enough of the beestings to create a batter of the desired thickness.
  • Drop tablespoonsful of the batter on a hot greased griddle and cook for 4 to 6 minutes on each side.
  • Serve with rich butter, cream or syrup.
  • This recipe comes from Joanne Asala's book, "Celtic Folklore Cooking".

    Where are those blasted "post birth" cows when I need them?!? Love this kind of "folklore" and recipes, Delia...will pass it along to my Irish fanatic daughter (irishmama on here)...she will LOVE it. Thanks for sharing the recipe and the background!
