Ingredients
  • 5 cups flour
  • 1 teaspoon baking soda
  • large pinch of salt, or to taste
  • 1 egg yolk
  • 2-3 teaspoons sugar
  • 4-5 cups beestings
  • butter or lard for frying

Directions
  1. Mix the flour, baking soda, salt, egg yolk and sugar in a large bowl.
  2. Beat in enough of the beestings to create a batter of the desired thickness.
  3. Drop tablespoonsful of the batter on a hot greased griddle and cook for 4 to 6 minutes on each side.
  4. Serve with rich butter, cream or syrup.
  5. This recipe comes from Joanne Asala's book, "Celtic Folklore Cooking".
