Here is a great, easy hot appetizer that is always a crowd pleaser. I even omit the crab and it's just as delicious. You can also serve with crudites and crackers in a beautiful bowl as a dip! Click on the pic...!

Ingredients
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 16 ounces crabmeat (can omit)
  • 1 cup mayonnaise
  • 1/3 cup chopped onion
  • 3/4 cup grated Parmesan cheese
  • 1 (12 ounce) package English muffins

Directions
  1. Preheat oven to 375.
  2. In a medium size mixing bowl, combine artichoke hearts, crabmeat, mayonnaise, onions, and cheese. Mix thoroughly.
  3. Split each English muffin in half ,and spread the mixture on the cut side of the split muffins. Cut each of the sliced muffins into quarters. Arrange the muffin-bites on a baking sheet.
  4. Bake for 12 minutes, or until golden brown. Serve hot.
  5. For just the dip, bake in a small glass dish for 20 minutes at 350 until hot and serve!

This is a great recipe as I love crab meat and artichoke hearts. I always have english muffins and artichoke hearts on hand, however I'll have to get some crabmeat in....as this is a must try soon recipe! 5 all the way!
