Spinach Souffle

- 12 large eggs separated shopping list
- 1/4 cp flour shopping list
- 1tsp salt shopping list
- 1/2 tsp course pepper shopping list
- 8 oz sharp cheddar cheese shopping list
- 2 cps milk shopping list
- 1 lb chopped spinach shopping list
- 1 tsp chopped garlic and onions shopping list
- 1/2 cp chopped green onions shopping list
How to make it
- Separate eggs in two bowls
- melt butter in heavy sauce pan (do not brown)
- add flour and make smooth rou
- add milk, salt and pepper
- heat til thick and smooth
- add cheese
- stir til cheese is melted
- remove from heat
- add spinach, garlic
- beat egg yolks till foamy
- add yolks to spinach mixture
- beat egg whites till stiff peaks form
- gently fold whites into spinach mixture
- pour into large casserole or souffle pan
- bake at 350 degrees or untill a knife inserted in center comes out clean
- Serve immediately.
- I have also made this with broccoli and either way it is delicious. This goes very well with fish.
