How to make it

  • Separate eggs in two bowls
  • melt butter in heavy sauce pan (do not brown)
  • add flour and make smooth rou
  • add milk, salt and pepper
  • heat til thick and smooth
  • add cheese
  • stir til cheese is melted
  • remove from heat
  • add spinach, garlic
  • beat egg yolks till foamy
  • add yolks to spinach mixture
  • beat egg whites till stiff peaks form
  • gently fold whites into spinach mixture
  • pour into large casserole or souffle pan
  • bake at 350 degrees or untill a knife inserted in center comes out clean
  • Serve immediately.
  • I have also made this with broccoli and either way it is delicious. This goes very well with fish.
