This is a beautiful mile high souffle that is absolutely delicious.

Ingredients
  • 12 large eggs separated
  • 1/4 cp flour
  • 1tsp salt
  • 1/2 tsp course pepper
  • 8 oz sharp cheddar cheese
  • 2 cps milk
  • 1 lb chopped spinach
  • 1 tsp chopped garlic and onions
  • 1/2 cp chopped green onions

Directions
  1. Separate eggs in two bowls
  2. melt butter in heavy sauce pan (do not brown)
  3. add flour and make smooth rou
  4. add milk, salt and pepper
  5. heat til thick and smooth
  6. add cheese
  7. stir til cheese is melted
  8. remove from heat
  9. add spinach, garlic
  10. beat egg yolks till foamy
  11. add yolks to spinach mixture
  12. beat egg whites till stiff peaks form
  13. gently fold whites into spinach mixture
  14. pour into large casserole or souffle pan
  15. bake at 350 degrees or untill a knife inserted in center comes out clean
  16. Serve immediately.
  17. I have also made this with broccoli and either way it is delicious. This goes very well with fish.
