Banana Bars Recipe
Moist, delicious bars! Recipe came from my Dad's secretary years ago. They actually stay very light - do not darken like most baked goods with bananas in them. Do try!

Ingredients
  • 2 cups flour
  • 1/2 cup dry milk
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 cup shortening
  • 2 cups sugar
  • 2 eggs
  • 1 cup mashed banana
  • 1 cup chopped nuts (optional)

Directions
  1. Mix flour, dry milk, baking powder, and salt together.
  2. Cream shortening and sugar, add eggs, and beat well.
  3. Add half the dry ingredients, then mashed bananas.
  4. Add remaining half dry ingredients, and nuts, if using.
  5. Bake in 13 x 9 pan (sprayed with pan spray) 35 min. at 350 degrees.

Wow these do sound good! I've never made banana bars, usually bread, and pumpkin bars. Will bookmark to try when I've got nanners:o)
