This dish I do on stove top some times we grill the shrimp, sometimes fried shrimp...any of these work well ...IT'S A WRAP!! Family loves these....so do I... It's so not fatting...lol

Ingredients
  • 1 lb med shrimp, shelled
  • 2 cloves Minced Garlic
  • 1/3 cup lime juice /or lemon
  • 4 flour tortilla (9 inch)
  • 1 tbs olive oil
  • 2 lg bell peppers, thinly sliced
  • 1 lg onion, thinly sliced
  • 2 or 3 slices of japaleno peppers (chop up the slices)
  • leafy lettuce
  • fresh diced tomatos
  • melted american white or yellow cheese (cheese in a bow melted)
  • mayo with cajun seasoning

Directions
  1. Stir together shrimp, garlic, and lime/lor lemon juice. Let stand at room temperature for 20 minutes.
  2. Meanwhile, wrap tortillas in foil and place in a 350 oven until hot (about 15 minutes).
  3. Heat oil in a wide nonstick frying pan over medium-high heat.
  4. Add peppers and onion. Cook, stirring occasionally, until limp (about 10 minutes)
  5. Remove onions and peppers set aside and keep warm.
  6. Add shrimp mixture to pan, increase heat to high, and cook, stirring often, until shrimp are pink; cut to test (about 3 to 5 minutes)these are med shrimp so don't over cook them...
  7. Return vegetables to pan, stirring to mix with shrimp.
  8. To dress the tortilla:
  9. cajun mayo
  10. leafy lettuce
  11. dice tomato
  12. Spoon shrimp mixture into tortilla (with onions and peppers)
  13. Spoon alittle of melted cheese
  14. then roll up. and Bon Apetite'
