Cranberry Loaf with a Hiccup

- 2-1/3 cups / (580 mL) all-purpose flour shopping list
- 2 teaspoons / (10 mL) baking powder shopping list
- 1/2 teaspoon / (2 mL) salt shopping list
- 1/3 cup / (80 mL) sweet butter, softened shopping list
- 2/3 cup / (160 mL) sugar shopping list
- 2 large eggs shopping list
- 1/2 cup / (125 mL) Le Snoreau(cranberry flavoured beer) shopping list
- (if you can't find cranberry flavoured beer then a fruity beer will do) shopping list
- 2/3 cup / (160 mL) marmalade or apricot preserves/jam shopping list
- 1 cup / (250 mL) fresh cranberries shopping list
- Note: I have used frozen cranberries and they work well. shopping list
How to make it
- Preheat the oven to 375 degrees F.
- Sift together the flour, baking powder, and salt.
- In a separate bowl using an electric mixer, cream the butter and sugar.
- Beat in the eggs one at a time.
- Mix in the beer.
- Blend the marmalade / apricot jam with a spatula or wooden spoon.
- Add the flour mixture and blend together.
- Add the cranberries last.
- Butter and flour a 9 inch loaf pan.
- Pour the mixture in and bake for approximately 1 hour, or until a cake tester comes out clean.
- Cool the loaf for about 10 minutes, then turn onto a rack to cool completely.
