Ingredients
  • 1 1/2 cups cottage cheese
  • 1 egg separated
  • 1 package unflavored gelatin
  • 1/8 teaspoon salt
  • 1 cup sugar
  • 1 cup milk, divided in half
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla
  • 6 Tablespoons whipped cream
  • Graham cracker crust

Directions
  1. Put cottage cheese and half of the milk in blender and blend until smooth.
  2. Put egg yolk in the top of a double boiler and beat well
  3. Add remaining milk, gelatin and salt
  4. Cook, stirring over boiling water for 10 minutes or until gelatin dissolves.
  5. Remove from heat and add the sugar
  6. Let it cool
  7. Add cottage cheese/milk mixture, lemon juice and vanilla
  8. Chill, stirring occasionally, until the mixture mounds when dropped from a spoon
  9. Beat the egg white until it stiffens
  10. Fold the egg white and whipped cream together into the mixture
  11. Pour into a graham cracker crust and let chill for about an hour.
