Similar to Chinese Egg Tarts, this Portugese Custard Bake is richer, creamier with slight browning on the custard and pastry. Very delectable!

Ingredients
  • 1 pkg of puff pastry
  • 6 egg yolks
  • 1 cup of sugar
  • 1/4 c flour
  • 2 cup of heavy whipping cream
  • 2 tsp grated lemon rind
  • nutmeg
  • 3 tsp real vanilla extract
  • icing sugar

Directions
  1. Roll puff pastry on floured surface.
  2. Cut into 12 rounds and fit into muffin tins. Chill dough.
  3. Blind bake for 8 to 10 minutes at 375 degree oven.
  4. Beat eggs, sugar, flour, lemon, cream, vanilla until smooth in increased in volume.
  5. Strain the filling through a strainer. Set aside.
  6. Pour custard into baked shells and broil (6 inches from element) at 425 degrees for 10-15 minutes.
  7. Check custard is set. Chill for a couple of hours.
  8. Sprinkle with icing sugar before serving.
