This is my favorite banana bread recipe. It had it's humble origins in the Farmer's Daughter Cookbook. I have messed and messed with it, till it's my own. I always make a double batch as the first loaf vanishes an hour after it comes out of the oven... More

Ingredients
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 egg
  • 2 t good quality vanilla extract
  • 2/3 cups mashed bananas
  • 1 3/4 cups all purpose flour
  • 1/2 t baking powder
  • 1/4 t salt
  • 1/2 t baking soda
  • 3 T plain yogurt (like Brown Cow)
  • 1/2 cup chopped walnuts

Directions
  1. Preheat oven to 350 degrees
  2. Cream butter, sugar, egg and vanilla
  3. Stir in mashed bananas
  4. In a separate bowl combine the dry ingredients
  5. Add the dry ingredients to the creamed mixture a bit at a time alternating with the yogurt.
  6. Stir in the walnuts
  7. Pour into greased loaf pan and bake for about 70 minutes till wooden skewer comes out clean.
  8. For goodness sake wait till it cools to eat it!
