Eggstraordinary Sandwiches

- 4 eggs shopping list
- ¼ chopped onion shopping list
- 2 tbsp mayo shopping list
- 2 tbsp sweet relish shopping list
- 2 tbsp Dijon mustard shopping list
- 2 tsp dill shopping list
- salt & pepper shopping list
- squeeze of lemon juice shopping list
- 4 slices rye bread shopping list
How to make it
- Place eggs in a saucepan and cover with cold water. Bring to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Have a bowl filled of cold water ready.
- Remove eggs from hot water, place in bowl, peel and chop. Set aside.
- For the dressing, mix the onion, mayo, relish, mustard, spices and lemon juice together in a bowl.
- Fold the egg chunks into the mix until well coated.
- Refrigerate for 30 minutes. Serve sandwiches on toasted rye bread & enjoy :-)
