Eggstraordinary Sandwiches Recipe
Egg salad: simple, understated, delicious! I came up with this recipe while experimenting in my college dorm kitchen. You can make a bigger batch on Sunday and have enough for the week’s lunch.

Ingredients
  • 4 eggs
  • ¼ chopped onion
  • 2 tbsp mayo
  • 2 tbsp sweet relish
  • 2 tbsp Dijon mustard
  • 2 tsp dill
  • salt & pepper
  • squeeze of lemon juice
  • 4 slices rye bread

Directions
  1. Place eggs in a saucepan and cover with cold water. Bring to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Have a bowl filled of cold water ready.
  2. Remove eggs from hot water, place in bowl, peel and chop. Set aside.
  3. For the dressing, mix the onion, mayo, relish, mustard, spices and lemon juice together in a bowl.
  4. Fold the egg chunks into the mix until well coated.
  5. Refrigerate for 30 minutes. Serve sandwiches on toasted rye bread & enjoy :-)
