Grandma Bettys Carrot Cake

- 2 cups flour shopping list
- 2 cups sugar shopping list
- 1-1/2 cups oil shopping list
- 3 eggs, beaten shopping list
- 1-1/2 cups coconut, shredded shopping list
- 1 cup crushed pineapple with juice shopping list
- 2 cups grated carrot shopping list
- 2 tsp baking soda shopping list
- 2 tsp vanilla shopping list
- 2 tsp cinnamon shopping list
- 2 tsp nutmeg shopping list
- 1 tsp salt shopping list
- 2 cups walnuts, chopped shopping list
How to make it
- Combine all dry ingredients.
- Add beaten eggs, oil, pineapple, vanilla and carrots.
- Fold in nuts.
- Pour in to 9x13 pan. No need to grease.
- Bake for 20 minutes at 350 degrees.
- Turn down to 300 degrees and cook for an additional hour.
- Cool completely before icing.
- Top with Grandma Betty's Cream Cheese Frosting!
