How to make it

  • Trim fat from steak. Score both sides of steak in a diamond pattern by making shallow diagonal cuts at 1" intervals (more surface area for marinade to penetrate). Place steak in a resealable plastic bag and set in a shallow dish.
  • For marinade, in a small bowl combine 1 tsp lemon zest, lemon juice, sugar, soy sauce, oregano and pepper. Pour marinade over steak. Seal bag; turn to coat. Marinate in fridge for at least 2 hours or as many as 24; turn bag occasionally.
  • Drain steak, reserving marinade. Grill steak in uncovered grill directly over med coals for 17 to 21 minutes or till desired doneness, turning and brushing once with reserved marinade halfway through grilling. Discard remaining marinade.
  • To serve, slice steak across grain. If desired serve with grilled lemon wedges and garnish with additional lemon zest.
