I acquired this amazingly simple stir-fry from an organic farm in Thailand.

Ingredients
  • 100g sliced chicken
  • 2 tbsp. of frying oil (eg. soya bean, palm, vegetable, macadamia)
  • 5 cloves crushed garlic
  • 1/3 cup of sliced long beans
  • 2-3 hot red chillies
  • 1 cup fresh sweet basil leaves
  • 1 tbsp. fish sauce
  • 1 tbsp. oyster sauce
  • 1/2 tsp. sugar
  • 1/4 cup sliced onions
  • 3 tbsp. water

Directions
  1. Pour oil into wok on low heat.
  2. When oil is hot, add garlic, onion and chillies. Stir until fragrant.
  3. Add chicken and increase heat to medium. Stir until chicken is well done.
  4. Add long beans, fish sauce, sugar and oyster sauce.
  5. Add a little water and stir together well.
  6. When everything is coated with sauces, add basil leaves and stir once more.
  7. Serve with Jasmine Rice.

I tried this recipe this weekend substituting chopped Chinese cabbage for the long beans because I had just been given a huge head of cabbage from my CSA (community supported agriculture) and it was very good! Used scallions for the onions because I like them. Definitely a keeper!


Made this tonight - it was absolutely delicious and very easy to make! My husband's exact words were, "If you want to cook like this every night, I won't object!" Awesome, tasty dish!
