Lese Fryes - Medieval Cheese Tart Recipe
This is a delicious and easy cheese tart. For some interesting variations you might try adding crisp bacon, fried onions or minced ham to the filling before baking.

  • 1 9-inch pie shell
  • 1/2 pound gouda cheese
  • 3 eggs, beaten
  • 1 tablespoon butter
  • 1 tablespoon sugar
  • 1 teaspoon salt, or to taste

Directions
  1. "Lese fryes. Take nessh chese, and pare it clene, and grinde hit in a morter small, and drawe yolkes and white of egges thorgh a streynour, and cast there-to, and grinde hem togidre; then cast thereto Sugur, butter and salt, and al togidre in a coffyn of faire paast, And lete bake ynowe, and then serue it forthe."
  2. Preheat the oven to 400-degrees F.
  3. Crisp the pie shell for 10 minutes and remove it from the oven.
  4. Remove any wax, hard rind or mouldy spots from the cheese.
  5. Put the cheese, eggs, salt, sugar and butter into a blender and blend until smooth.
  6. Pour this mixture into the crisped pie shell and bake at 400 for 10 minutes.
  7. Reduce the oven temperature to 325-degrees F., and bake for 30 to 35 minutes more, or until a toothpick inserted in the center of the pie comes out clean.
  8. Remove the pie from the oven and let it stand for 10 minutes before serving.
  9. Serve hot.
