Brown Derby Dreamy Coconut Cake Recipe
Do you remember the Brown Derby? My grandfather did. And this is their variation on their grapefruit cake. Best served with the White Mountain Frosting I describe elsewhere.

Ingredients
  • 1 1/2 c sifted cake flour
  • 3/4 c sugar
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/4 c water
  • 1/4 c oil
  • 3 eggs, separated
  • 3 Tbsp grapefruit juice
  • 1/2 tsp grated lemon zest
  • 1/4 tsp cream of tartar
  • White Mountain Frosting
  • Shredded coconut

Directions
  1. Sift together flour, sugar, baking powder and salt into bowl. Make a well in the center and add water, oil, egg yolks, grapefruit juice, and lemon zest.
  2. Beat until very smooth.
  3. Beat egg whites with cream of tarar until stiff but not dry.
  4. Gradually agg egg whites to batter and fold in gently until just blended. Do not stir.
  5. Turn batter into an ungreased 9" springform pan and bake at 350 for 30 minutes.
  6. Cool in pan on rack.
  7. Remove from pan, and with a serrated knife cut cake across to make 2 layers.
  8. Fill with frosting; frost top and sides with remaining frosting.
  9. Sprinkle generously with coconut.
