White Mountain Frosting Recipe
This frosting comes from the Brown Derby, and is best suited for their Dreamy Coconut Cake. Much like the Pink Peppermint Frosting, it requires the use of a candy thermometer.

Ingredients
  • 2 c sugar
  • 3/4 c water
  • 2 Tbsp light corn syrup
  • Dash salt
  • 2 egg whites
  • 3/4 tsp vanilla extract

Directions
  1. Combine sugar, water, corn syrup and salt in a saucepan. Cook and stir constantly over low heat until the sugar dissolves.
  2. Cover saucepan 2 or 3 minutes to dissolve the sugar crystals on the sides of the pan.
  3. Uncover and continue cooking to the soft ball stage - 236 ° F
  4. Remove from heat.
  5. Beat egg whites until stiff but not dry.
  6. Add hot syrup in a slow stream, beating constantly.
  7. Beat in vanilla and continue beating until the frosting holds deep swirls.
  8. Makes enough to frost and fill one Brown Derby Dreamy Coconut Cake.
